You are doing all the right things and I do not think it will be a year before you can eat most of these foods again- I think about 3-6 months.
You don't have to obessively rotate- just try to be aware and minimize those foods. I find rotation diets to be a bit crazy-making, but you can try it out. I'm taking probiotics & digestive enzymes with each mini-meal, drinking green matcha tea (would a greens powder be better?), eating the natural fermented foods (like pickles & kimchee), love yogurt & kefir.... What else can I be doing?
They both have beneficial effects on digestion and have numerous healing properties attributed to them...I think it's a personal preference thing. Coconut water kefir is something that is on my list of things to make really soon- it is supposed to be just wonderful...

What is your instinct about this? You could certainly try to eliminate those from the list that you eat frequently and see how you felt, but then you need to make sure you have enough other things to eat. Remember that the elimination and challenge gives the most clear picture, so you could try to eliminate and then challenge some of these items...it would take some work but that is probably what I would do. I would not necessarily eliminate them all at once though as that would really limit your diet- it's up to you.
The other option is just to minimize the VLs as much as you can without eliminating them completely. Eat them on a rotation basis.
And focus on ways to improve the integrity of your digestive tract-- this will help avoid sensitivities in the future.

How does the Kombucha compare with water kefir tea? I recently revived the little guys and they are finally starting to wake up. My kefir is still fizzy from a few days ago!!!

We introduce these wonderful fermented foods and beverages a bit later in the program (week 11 and 12 I think) and actually recommend you make kombucha at that point. But feel free to get started with it now- I personally love kombucha and occasionally make it but prefer the yummy Synergy brand grape kombucha over my own! Yes you do use sugar to make it but the sugar is all digested in the fermentation process. It does not work well with alternative sweeteners. Make sure to use organic black tea bags with the sugar and you'll be all set.

I will try soaking the brown rice and cooking it in the broth. I have been soaking all my grains before testing them, but I do not think I soaked the brown rice.
Brown rice is generally very easy to digest so I wouldn't blame the "not easing into it" especially if you tested a small amount and had a big reaction. You could try soaking it and then cooking it in some homemade chicken broth and see if this makes a difference, as this will improve its digestibility, but it sounds like it does not work for you right now.

If I use the Print This Weeks Menu function, I get Week 2. If I just go to the menu view for the day, it is correct, as is the shopping list. I like to print out my menus and keep it in the kitchen as a handy reference and guide to tell me what I need to take out of the freezer, soak, sprout, etc.
There may be some similarities but no they are not the same. Chocolate testing is on day 2 and barley is on day 5...

I got back the results of my Elise test. I scored:
3+ Trout
2+ Salmon
1+ Egg yolk, clam
VL (very low) on many things! My Dr said to ignore those. Is that right?!? Doesn't seem right, since the paperwork said scoring VL can still mean you have sensitivity but that your immune system is doing a very good job of combatting it.
So what is your interpretation? What do you recommend? I"d appreciate any input, since my Dr seemed clueless. He told me to ignore the VL and to stop eating the 1+, 2+, and 3+ foods. When I asked him if I could ever go back to them he said yeah we could test again in a year.
I was really surprised to have no reaction to tomato because I've been sure I have a sensititivy for almost my whole life (makes me clear throat and cough).

Originally we were going to do the gluten grains testing in one day, so we planned the lesson and menu that day around that, but then we changed course and decided to test all the grains separately, because maybe someone can't have oats but can't have spelt, etc. and it does make a different as being able to eat the widest range of foods is preferred. I did pretty good this week, although I am not on the menu/testing schedule at all. I guess that's OK. We ran into some scheduling problems last week and so I couldn't test oats. I decided to test that this week (yesterday) and I am not going to test for spelt until later. I will still test for corn this week, and I am thinking Friday for that. Have I totally confused you?
I am staying faithful and on the diet guidelines so far, even when we go out. I felt awful after eating a chicken salad, that was supposed to be gluten free and organic at one of my areas premier health food restaurants last week. So on that one, I don't know if I veered off or what, but I felt "off" for a couple of days.
Still no size loss (I have to call it that because I do not own a scale and I am measuring myself by how my clothes fit.). :( But I am remaining vigilant!
I have boosted my exercise up each day, and with the weather warming up, it just plain feels GREAT to get out in the fresh air!
I am glad you got to go out with friends and I hope you enjoyed the evening! Don't beat yourself up over the pizza-I think sometimes you gotta fall off a bit just to remember how good you feel when you get back on.

No- do not have it again if you reacted to it. If you are sure it was the quinoa, then you should avoid it. You can substitute any of the other non-gluten grains for quinoa and just make up another salad dish to substitute (or, if you do better with protein meals you could make a chicken or something else to eat with some veggies during the meals when you would have had that salad).

I have never had my adrenals checked, but the next Weston Price foundation meeting in April for my area is about adrenal fatigue. Should be quite interesting!
Last Monday I went to a meeting where they talked about intestinal health. It was absolutely fascinating. I am learning soo much.
I'm not sure if the fucothin is working or not. the weight is coming off very slowly, this week I had some friends call and me and my dh went and met them for drinks. I only had 2 glasses of red wine, but the pizza I think set me back. Now I have this junk in my body and it seems to have triggered something. I can't seem to quit munching. Also, I tested cocoa this week. That was a BIG no-no. I can't have anything sweet in the house. I made the chocolate almond balls which were fantastic, but I have eaten almost all of them and now have gained back 3 pounds. It's so hard for me once I get off the wagon to get back on.
The people at the health food store sain and I read in Jordan Rubin's book Perfect Weight that it does take at least 6 weeks to kick in. I guess it would depend if you want to spend that kind of money. I did however, since this is week 8 for me start losing more than 1 lb a week. In the past 2 weeks I lost 2lbs each week. So, maybe it is working. I dunno!
Eating this way, I"ve already dropped weight in the first week. So for those who don't think that this stuff impacts weight loss, I'm living proof! It took me years to get the adrenals normalized because I wasn't eating as healthy as I am now, but perserverance pays off. Tammy
Tammy-Even though I am not seeing weight loss, my whole family (myself included) are feeling so much better! I am certain once I get the adrenal/estrogen/thyroid issues stabilized, my weight will normalize! We were eating great before, but the allergy elimination has opened our minds just a little further, and for the better I think. I love what I am learning here! I will be just totally ecstatic once the weight starts coming off! Thanks for being so encouraging!
I have been researching a lot of this info for quite a while as well. It was nice to see so much of what my family is moving towards all in one program.
I have only recently (within the last year) had my adrenals checked and my hormones finally looked at appropriately. I don't know if you read it in my other posts, but I am pretty much in the same boat as you. I am trying to reverse my adrenal stress, estrogen dominance, and thyroid imbalance, but I don't have a Dr. right now. It it inspiring that you have had success with turning this around!
