    Yes,
    We certainly are working out the bugs! We were going to allow the non-gluten grains at first, but then we changed course...as for the small amount of sugar in an entire recipe, we actually do feel that is ok- we want our food to taste good and we don't want anyone to feel they are going through a completely spartan regime.
    We've been working over the last few weeks to update all the menus and recipes so that there are no mistakes- look for the newly revised menus soon!

    I've found a few discrepancies. Not to do with the shopping lists, but I thought you might want to know.

    Week 1

    Recipes: Asian chicken stir fry recipe says to serve over brown rice. Grains aren't allowed in the first two weeks. (You probably created universal recipes that can be reused later. But this could cause some confusion, or some blind following.)

    The Thai Curry beef recipe (delicious!) calls for organic brown sugar. I'm sure we're supposed to be avoiding any kind of sugar in the beginning. I sweetened my curry sauce with a little stevia.

    Menu for day 4 has Lentil Kale soup listed after the evening snack. Should this have been somewhere else?

    Menu for Week 2:

    Day 6 Dinner calls for 1/2 cup quinoa. That isn't allowed until the following week. Also there's no evening snack listed for that day. Not a big deal. I can skip or improvise.

    I realize you're still getting the bugs worked out, so I thought you might like to know.

    I don't mean to hijack someone else's thread, but this seems like a good place to share. I saw no need to start a new thread that's all about ME.

    Unlike Alice, I was thin as a child. It wasn't until I was about 16 that I started gaining weight. That's when I started having problems with my blood sugar (I should say insulin), but I couldn't identify the problem at the time. Looking back I can't believe I survived on Lucky Charms for breakfast and a Coke at lunch every day. Even then I was never more than 10-15 pounds above my ideal during high school.

    Then I got married, recognized my sensitivity to sugar, and did all the wrong things. I gained around 40 pounds over a few years. Back in 2000, I started a new way of eating that allowed me to lose 40 of the 50 I needed to lose, in 9 months. But since the focus of that program was wrong and I wasn't eating whole foods, I could never lose that last 10. I finally gave up. Didn't make a point to exercise. I knew I was addicted to sugar, but didn't do anything about it.

    Fast forward to today, having regained all 40 pounds over 4 years. I decided recently to get serious and joined Enlita. But I joined the week before Thanksgiving. Knowing it started with an elimination diet, I thought, why do that to myself over Thanksgiving?

    But I was more conscious of what I ate, simply knowing I was going to change my eating. I lost 2 pounds that week. Then I started exercising again.

    I started week one of the Enlita menu Sunday, November 25. I weighed myself this morning. I lost another 3 pounds. That's only 2 days of following the menu, but 2 weeks after I first joined Enlita.

    Thank you so much, Kendra and the rest of the staff. Simply absorbing as much information on this site as I could, and getting into the right mindset, has already reaped huge benefits for me.

    Can't wait to see what the next 2 weeks bring!

    Yes your situation in a bit unusual but you are on the right track. Grow anything you can (definitely the greens if this is the only way you have access to them- can you grow them indoors? Hydroponically? These are just ideas and I'm not sure they'll work...) and then make substitutions where necessary. Herbs and non-gluten grains can all be interchangeable and just make vegetable substitutions as you see fit. Good luck,

    I'll suggest that to Dr. Winnie.
    It's hard to find quality dairy foods and I asked her to keep Dairy to a minimum because many people have a problem.

    If you're not senstitive, feel free to eat it.

    Food combining rules state that you should eat melons alone.
    Not everyone follows food combining rules. They are not widely accepted as fact but if you have digestive problems, some people say they help.

    Just put chicken breasts in a casserole dish with some water and salt and cook covered for 90 minutes at 215 degrees. Cooking at low temps keeps the protein from being damaged.

    Thanks for sharing! This is a common story.
    Childhood obesity can be due to lifestyle, genetic or hormonal reasons. I wonder if you have an idea which of those many have contributed.
    It is more difficult to lose weight when the weight gain begins in childhood.
    But you are making wonderful progress on the program so far.

    "causing damage to your organs, brain chemistry, blood sugars, GI tract...every part of your body ...... It's a punishment......the pleasure of eating sweets only lasts a few seconds and then you spend a lifetime trying to get rid of the damage."

    What a good way of looking at it. I never thought of sweet treats that way. Desserts have always been a reward for me, too. As a little girl, desserts were a reward and have continued to be so. I will TRY to remember the above each time I am tempted. When I attend business dinners, etc. dessert is always part of the meal and I really look forward to it. Any tips?

    I have purchased chia seeds. They are just as small as poppy seeds. Do they need to ge ground, like flaxseeds, to make their nutrients available? Currently, flax are the only seeds that I grind. Which seeds should be ground and which seeds can be eaten whole?

    Also, I wasn't very successful in popping chia seeds. A few did pop but most did not. I had to stop the popping process when they were in danger of becoming burned. There was no noticeable difference between those seeds that popped and those that did not.

    When will the coaching program begin? I am stuck with my weight loss. It just is not happening and definitely need help. It goes down 3 or 4 pounds then up three or four pounds. I am allergic to dairy products but have cut them out. I need some help here.

    Cranberries are incredibly tart and this is why all the dehydrated ones you will find have some sweetener in them. I believe that in order to be successful with dehydrating them, you first need to cook them in some sort of sweet syrup for a few minutes until the skins pop, then you would dehydrate them for about 8 hours. Instead of cooking them in a sugar syrup, you could try a combination of apple cider and a bit of raw honey or maple syrup. I haven't tried this yet, so I'm just thinking aloud here...You could also use cranberries in a fresh relish with some juice and sweeter fruits to balance the tartness. A quick google search may provide you with some recipes for inspiration.

    Hi, I am just getting started with trying to lose weight, and also trying to figure out my way around this website, how to blog, where to find the lessons, etc. I would like to lose 15 pounds that I have been stuck at for years. I like the philosophy of this not being "a diet" but a transformation in the way I think about food, and a change of lifestyle. I've been walking more, eating less, being careful about what I eat, . . but sure could also use some support. Karen

    It is good to have a variety of oils in the diet. Flax provides some omega-3 and provided you buy a fresh one, keep it refrigerated, do not heat it, and consume it by the expiration date on the bottle, I do not feel you need to worry about rancidity. As for olive oil, it does not "turn in to trans-fat" at any temp. It simply is not the best oil for high heat cooking because it is somewhat fragile and is best used for salads and lower heat sauteing. Coconut oil is more stable at higher temps. so is suitable for higher heat cooking.

    I'm still wondering, though, does that mean flax oil is unlikely to be rancid. If not, why is it used? What are the health benefits?

    Also, regarding olive oil, at what temp. does it become a trans fat?

    Flax oil is only recommended in small quantities on our diet and can be substituted entirely with olive oil in the salad dressings, if desired. Coconut oil really is better than olive oil for sauteeing but if your roomate finds it so objectionable that is a problem. A combination of butter and olive oil is less likely to burn so you can try that...

    Best idea is to start again with 2 weeks of the elim diet- you can repeat weeks 2 and 3 then go ahead with the food re-introductions in weeks 4 and beyond. Don't be hard on yourself about it- beating yourself up won't help. You are human and everyone slips up now and then. Just be mindful from now on about what you are eating- stay with the program and we'll give you lots of tools to combat emotional eating.

    I'm not sure where you live- there are variations on what is available in different parts of the country...I'd focus more on reading the labels and looking for products that are organic and contain simple ingredients. For beans there should be nothing in there besides beans, water, maybe a little sea salt or kombu...oils should be organic and unrefined...as for mustard a very good brand is Delouis Fils- they also make a delicious olive oil mayo, but its not available everywhere. Just read the labels though - you might find a great small regional company that I'm not aware of!
