Cranberries

Since the holidays are upon us, I was wondering how to cook cranberries so I can dehydrate and use them in salads, etc.

All the dried cranberries I have found have sugar in the ingredients (even Whole Foods). I didn't know if I should boil or steam them, and to what consistency should they be. I assume I could put a pinch of stevia when cooking to cut the bitterness.

Cranberries

Cranberries are incredibly tart and this is why all the dehydrated ones you will find have some sweetener in them. I believe that in order to be successful with dehydrating them, you first need to cook them in some sort of sweet syrup for a few minutes until the skins pop, then you would dehydrate them for about 8 hours. Instead of cooking them in a sugar syrup, you could try a combination of apple cider and a bit of raw honey or maple syrup. I haven't tried this yet, so I'm just thinking aloud here...You could also use cranberries in a fresh relish with some juice and sweeter fruits to balance the tartness. A quick google search may provide you with some recipes for inspiration.
