Low Carb Turkey Stir-fry with Miracle Noodles


For those of you who want to cut down on your carbohydrate intake and increase your dietary fiber. Miracle Noodles are made from konjac glucomannan—a root vegetable that is almost entirely fiber. They have zero carbs and zero calories and they are high in fiber—making them a wonderful food for weight loss and diabetes. Konjac root has been used for centuries in Japan and China.

I ordered the “Ultimate Sample Pack” which includes 12 different kinds of pasta (what I didn’t realize is that it was 12 different shapes of the same fiber pasta.) Today I went back to the Miracle Noodle website and saw that they don’t recommend 1st time buyers to get the Sample Pack:

“Due to the varying textures of the above noodles, not recommended as a first purchase. First purchases should be angel hair, as it is our best selling product for a reason.”

Unfortunately the Angel Hair was not in my sample pack so I can’t vouch for it. But I will say that the texture and thickness of the noodle makes a big difference in how enjoyable this fiber pasta is—the thicker and bigger noodles are chewier and rubbery and not as easy to eat as the pasta that is small balls like the mini-pearls. I imagine this is why the thin angel hair pasta is their best seller.

I’ve come to the conclusion that I like the Mini-Pearls Pasta the best of the sample pack. These are tiny balls of pasta that are easy to chew and remind me of eating barley, orzo, rice or risotto. They are often used as a no-carb filler in soups. So if you want to try the Miracle Noodles I suggest you stick to small, thin noodles like the Mini-Pearls, Angel Hair, and possibly the Orzo.

 

Here is a winning recipe that I recently made with the Mini-Pearls Pasta:

Low-carb Turkey and Miracle Noodle Stir-fry

Ingredients


8 oz. Ground Turkey
1/4 cup Red or White Onion
2 cloves Garlic
1/4 tsp Cumin
1/4 tsp Lemon Pepper or a squeeze of fresh lemon
1/4 tsp Black Pepper

1/4 tsp Curry Powder
½ tsp. garlic powder
Himalayan Salt to taste
1 Package Miracle Noodles Mini-Pearls Pasta (zero carb fiber pasta)

Directions

Brown turkey on medium heat until done. Add diced onion and minced garlic, cook for five minutes. Add remaining spices. Rinse Miracle Noodles well and drain. Add to sausage and spices, stir thoroughly, cook for 3 minutes more.
Optional: sprinkle with grated Romano or Parmesan cheese for additional tastiness. Enjoy!
