Lentil Soup


Delicious & Simple Lentil Soup

1 Tb. coconut oillentil soup
1 large onion, finely chopped
3 carrots, chopped
1 sweet potato, chopped--optional
3 celery stalks, chopped
2-4 cups kale, thick stalks removed and
chopped--optional
1 3/4 cups red lentils, rinsed and drained
7 1/2 cups homemade or all-natural chicken stock, vegetable stock or water
Himalayan salt and pepper to taste

In a soup pot, heat the oil. Sauté the onion for several minutes. Add the carrot, optional sweet potato, celery and optional kale and cook a few minutes more. Add the lentils, liquid, a little salt and pepper, bring to boil, and then reduce heat to a simmer for about 45 minutes  or until the lentils are very soft. Add water if you prefer a thinner soup.

Stir in additional salt and pepper to taste. Add some cumin, fresh lemon juice, and a bit of olive oil for a Middle Eastern flavor or add any other herbs and spices that you enjoy. Makes 8 servings.
