1. If you don't like poached eggs, should you boil them and cut them up in the vegetable medley with poached eggs.

2. Can you sub organic oats for buckwheat? I'm not sure if I can find buckwheat groats.

3. If you don't have raw cheese, can you sub for regular cheese or should you just pick something else from the dairy category.

I am sorry for the delay in answering your question.
If you don't like poached eggs, your idea sounds just find.
You should be able to find some form of natural buckwheat, but if you can't, you can substitute brown rice or millet or quinoa.
As for cheese, if you can't find any raw cheese, we feel you should just skip it. Cheese really shouldn't be eaten unless its raw, though goat or sheep cheese may be fine. Plain organic yogurt or kefir could be a substitute too- if dairy works for you, these are two forms that, though not raw, are healthful and generally widely available. As long as you're not sensitive to it, you could have one of these a few times per week.
