Summer Quinoa Salad
Quinoa is a nutritious, gluten free "grain", high in protein. I made this recipe for my family this past weekend and they loved it! I didn't specifically measure anything, but just combined small portions of each and served the salad at room temperature. Here are the ingredients:
Quinoa (about 2 cups before cooking)
Sundried tomatoes
Capers
Fresh basil and Italian parsley
Olive oil, about 1-2 tbsp
Small amount of finely diced fresh garlic
Fresh grated parmesan cheese
Sea salt and black pepper to taste
