Can Amaranth actually be "popped", like corn?

Very cool! Is it high on the glycemic index? My base glucose level is hovering in the diabetic range so my doc wants me to avoid corn, white potatoes and other high glycemic starches. He hasn't put me on any medication because he believes diabetes is reversable with the right diet and 1 hour of vigorous walking per day (At least that's my first exercise goal. I expect he'll add weight bearing exercise eventually).

Yes it turns out much smaller than popcorn. Feel free to try it out whenever you like- there is no reason not to- amaranth is gluten-free and very hypoallergenic so if you're past the third week you can go ahead and try some! Let us know how you like it.

Popped Amaranth

So, it's not actually a snack--like popcorn, but more of a topping? From your reply it sounds like the popped grain is actually small. However, large or small, when the Enlita program allows it, I would like to try it out; a crunchy topping on salads sounds interesting!

Yes it can be popped. I myself have not tried it this way but I imagine you could add it to a soup or salad as a crunchy topping!
