You can substitute healthy whole foods with other healthy whole foods. Let's say you don't like salmon, then substitute any animal protein that you like.
Just try to avoid the allergenic foods and processed foods. :D
Freezing ground flax is a very good idea- it will keep them fresh for much longer.

Just to add to Tammy's suggestion, I also grind whole flax seed. I grind up enough to last a couple of days at a time and then I store it in the freezer. It is probably better to just make enough for immediate consumption, but I wonder what your thoughts are on freezing the ground flax?

I buy the flax seeds and throw them in my Vitamix (you can use a coffee grinder too). This way I know it's fresh and I get the fiber too! It's not exactly the same, but it's pretty versatile. I use ground flaxseeds in my smoothies and on my salad. I used to put it on my oatmeal. If all goes well when I get to that point (i.e. no allergy), I do it again. :D

Flax oil is very fragile and requires careful handling and storage. Our feeling is that as long as you pay attention to the dates on the bottle, and use the oil up before before the expiration, flax oil is a healthful oil for salads (it should never be heated). If you are uncomfortable using it, feel free just to use olive oil for your salads. I hope this answers your question,

I have read from other people, whose nutritional advice I greatly respect, that flax oil is so fragile that even buying it refrigerated in dark bottles from the HFS is no guarantee that it is not already rancid. Obviously, since it is recommended so often in the diet, you think this is not a problem? Can you comment on this further? I use freshly ground flax seeds often, but I have been shying away from the oil.
