Family Favorites
I just wanted to share a breakfast favorite that my family has been enjoying! This is actually a great meal/snack any time.
This is a quick breakfast to throw together for those mornings when you are rushed but still need to get that meal in! This meal is for those that have tested OK on dairy and does require some advance prep if you make it all from scratch, as I do.
1/4 - 1/2 cup Cottage Cheese
2 Tbsp. Greek Yogurt
1/4 - 1/2 cup Mango-Pineapple Chutney (Enlita recipe, Week 11)
1 Tbsp. ground Flax Seed
Top a serving of cottage cheese with ingredients listed, to your taste, and enjoy!
I also like to spice this up with either some chopped jalapeño peppers or a dash of cayenne pepper. YUM!
I am building my own "Enlita Recipe File" filled with family favorites that have been tried and tested--and voted a "keeper"! My goal is to have a wide variety of menu/recipe ideas to draw from no matter what the season is or what ingredients I have on hand.
I am hoping that this topic will encourage you all to submit your own favorite recipes and ideas!
